Goût de France / Good France : One day - One Restaurant

This year and for the second edition of the worldwide Goût de France / Good France event, 10 restaurants from Accra, Kumasi, Takoradi and Akosombo (up from one only last year) will participate and offer a French Dinner on March 21st.

Each chef will offer a “French-style” menu in his restaurant while remaining free to highlight his own culinary traditions and cultures. In each participating restaurant, the event will pay tribute to a vibrant, open and innovative cuisine, while remaining true to its values of sharing, pleasure, and respect for good food and for the planet. This will be a rare opportunity for Ghanaians to discover and enjoy the ‘Taste of France’ here in Ghana.

The menu’s price is at the restaurant’s discretion, and they are all encouraged to donate 5% of proceeds to a local NGO promoting health and environment. It is recommended to book your table in advance in one of these restaurants which are listed below.

- For you, what does French gastronomy means?
Going back to the classics and origins of French cuisine, and then updating them in new and exciting ways

- What does it mean for you to cook for a prestigious event as Gout de France / Good France?
Being inspired and being able to focus on traditional techniques, also to be part of the global recognition of French cuisine which good France is achieving.

- What story do your dishes tell us?
My grandmother was an amazing cook who trained at the Cordon Bleu school in Paris in the fifties, and introduced me to the flavors that I’m obsessed with today, so these dishes are remnants of her cuisine

- Will you use Ghanaian ingredients in your menu?
Yes for sure, bananas, avocado and all the vegetables in the dishes will be locally sourced.

- For you, what does French gastronomy means?
For me French Gastronomy means the base and grounding of my entire career.

- What does it mean for you to cook for a prestigious event as Gout de France / Good France?
This is my second time cooking dinner for Gout De France celebrations and in two countries for me is a great privilege.

- What story do your dishes tell us?
My dishes will show the technique and sourcing of great ingredients by the team at the Royal Senchi.

- Will you use Ghanaian ingredients in your menu?
Yes. Where possible we will use local ingredients on the menu

- For you, what does French gastronomy means?
French Cuisine is known for the Traditions of Cooking and the practices, from the 17th century the cuisine was driven away from the foreign influences and focused on local products like wine and cheese.
August Escoffier known as the father of the French cuisine in the 20 century, he lifted the food up to a new level. From this moment the food was not just there to be eaten but rather more an Art on plate experience.

- What does it mean for you to cook for a prestigious event as Gout de France / Good France?
I am happy to be part of the worldwide culinary event, to showcase French cuisine from classic ingredients with a modern interpretation on the presentation.

- What story do your dishes tell us?
It’s a small journey round real France, as we will start with the coast, were the fisherman catch the best seafood from which we will prepare a classic Bouillabaisse. Over to the countryside were we have chosen duck for our main dish. We will finish with the sweet taste of Mousse aux Chocolate or Crepes Suzette. Our final destination will be the creamy taste of French Cheese.

- Will you use Ghanaian ingredients in your menu?
For me it is important to use local Ingredients, supporting the local farming industry to have a sustainable supply for all Ghanaians. I see it as our responsibility to the environment not to waste energy to fly in food from other continents if it is not necessary. Some products have to be brought in, such as cheese, wine and other ingredients which are not produced in Ghana to have a real French flavour.
We have a big responsibility to play for a growth of the local communities to give them work, education and a good living standard.

- For you, what does French gastronomy means?
Modern cuisine has its roots in French cuisine and regardless of what dish is being cooked around the world at least one element or technique of French cuisine is being used and this showcases that as chefs are taught, the base of modern cuisine is strongly rooted in French cuisine

- What does it mean for you to cook for a prestigious event as Gout de France / Good France?
It is a good opportunity to showcase the classic techniques that have brought food to where it is today and also an opportunity for staff that have not been exposed to the classic techniques and menus to learn and progress as chefs

- What story do your dishes tell us?
They tell us the story of how classic French gastronomy has progressed to become an multinational celebration of food with roots all around the world

- Will you use Ghanaian ingredients in your menu?
90% of the ingredients are sourced locally with the exception of imported meat and seafood products, all vegetable products are sourced locally
